Cauliflower Cheese Recipe
1 large Cauliflower 300ml Milk 25g Fresh Breadcrumbs
1 tsp Mustard 110g Capel Cheddar Cheese Nutmeg
3 tbsp Plain Flour Salt & Black Pepper 50g Capel Butter
1. Trim the cauliflower boil in salted water for 10-15 minutes or until just tender.
Drain and place in a flameproof dish.
2. Add the milk, flour and butter to a saucepan. Heat, stirring continuously until
the sauce thickens, boils and is smooth. Allow to simmer for a further 2 mins.
3. Add three-quarters of the Capel cheese (grated), mustard, a pinch of nutmeg
and seasoning. Cook for further minute stirring well.
4. Pour the sauce over the cauliflower.
5. Mix the remaining Capel cheese (grated) and breadcrumbs together, sprinkle
over the top. Place under a hot grill until golden brown. Serve immediately.
Macaroni & Cheese Recipe
4 cups uncooked macaroni
5 tbsp Capel Butter
2 eggs 3 cups milk
1/2 tsp pepper 2 cups shredded Capel mozzarella cheese
1/2 tsp salt
4 cups shredded Capel cheddar cheese
1. Cook the macaroni until done as usual. Do not overcook it.
Drain macaroni in strainer.
2. Place macaroni, butter, salt, pepper, milk, Capel mozzarella cheese, and
3 cups of Capel cheddar cheese in casserole dish. Mix eggs in a bowl first
and then stir into mixture.
4. Cover everything with aluminum foil and cook for 45 minutes at 180°C.
5. Uncover and add extra cup of cheddar cheese across the top.
Bake uncovered for another 15 minutes
Apple Crumble Recipe
This is sure to be a favourite with both young and old. Light and fluffy, with just a touch of old-time goodness.

| 4 Cooking apples |
2 tablespoons brown sugar |
| 3 tablespoons water |
2 tablespoons rolled oats |
| 1 teaspoon cinnamon |
1/4 cup self raising flour |
| 2 tablespoons of Capel Butter |
Method:
1. Preheat oven to 190°C
2. Peel, core and slice apples. Place in 2L ovenproof dish with water & cinnamon.
3. Rub Capel Butter into flour until mixture is crumbly. Mix in brown sugar and rolled oats. Sprinkle over apples.
4. Bake at 190°C for 30 minutes.
Serve warm or cold with whipped cream.
Coconut Banana cake
This is sure to be a favourite with both young and old.
Ingredients:
1 ripe banana
185g Capel Dairy Blend
185g raw sugar
185g wholemeal self raising flour
3 eggs
2 tablespoons desiccated coconut
1 teaspoon vanilla essence Desiccated coconut for tin
Method:
1. Cream Capel Dairy Blend and sugar until fluffy
2. Add mashed banana and vanilla and beat until well blended
3. Add eggs one by one alternating with flour/coconut mixture
4. Grease a 20cm ring tin and sprinkle out access
5. Pour mixture into tin.
6. Bake in oven preheated to 180 degrees C for 45 minutes or until cake springs back lightly to touch
7. Turn out onto rack to cool
